Ingredients

Scale
  • 1 New York strip steak, 1 to 1.5 inches thick
  • 1 tablespoon olive oil
  • 1 tablespoon kosher salt
  • 1 teaspoon crushed black peppercorns
  • 1/2 teaspoon dried minced garlic
  • 1/2 teaspoon dried minced onion
  • 1/4 teaspoon fennel seeds
  • 1/4 teaspoon red chili pepper flakes
  • 1 tablespoon butter (optional, for finishing)

Instructions

  • Step 1 – Preheat your grill to high heat, around 450-600°F.
  • Step 2 – While the grill is heating, bring the New York strip steak to room temperature. Pat it dry with paper towels.
  • Step 3 – In a small bowl, mix together the kosher salt, crushed black peppercorns, dried minced garlic, dried minced onion, fennel seeds, and red chili pepper flakes.
  • Step 4 – Rub the steak with olive oil, then coat it generously with the seasoning blend on all sides.
  • Step 5 – Place the steak directly on the grill and sear for 2-3 minutes per side, creating a nice crust.
  • Step 6 – Rotate the steak 90 degrees on each side to create crosshatch grill marks and ensure even cooking.
  • Step 7 – Use a meat thermometer to check the internal temperature, aiming for 130°F for medium-rare.
  • Step 8 – Remove the steak from the grill and let it rest for 5 minutes to allow the juices to redistribute.
  • Step 9 – Optionally, finish the steak with a pat of butter for extra richness before serving.
