Instant Pot Juicey Ribeye Steak

Instant pot is a great way to cook a ribeye steak – make sure you choose a steak that is at least 1-inch in thickness, for maximum flavor! 

Ingredients

  • 1-inch Ribeye steak
  • Gustus Vitae Garlic Truffle Seasoning OR see spice blend below
  • 1 cup water
  • 2 tbsp canola, ghee, or tallow

For the spice blend

  • 1/2 tsp ground pepper
  • 1/4 tsp onion powder
  • 1/4 tsp sea salt, coarse
  • 1/2 tsp smoked paprika
  • 1/2 tsp fine garlic powder

Instructions

  1. If making your own spice blend, combine all seasonings in a small bowl. If using a spice blend, set aside around 1 tbsp.
  2. Pat steaks dry completely with paper towels. Rub seasoning all over the steak, massage it in for a minute or two.
  3. Press saute on the Instant Pot, add oil of choice. Wait for it to get hot (it will start to smoke).
  4. Place steak in pot to sear – 1 to 2 minutes on each side.
  5. Press cancel. Remove steak and set aside.
  6. Pour water into the pot and deglaze it with rubber spatula.
  7. Place trivet inside pot, place steaks on top.
  8. Secure lid and turn vent to sealing. Pressure cook on high for 3 minutes (for medium rare), up to 12 minutes for well done.
  9. When timer beeps, carefully turn valve to venting to manually release pressure. PRO TIP: if you let it depressurize on its own, the steak might be in there too long. Do a manual release.
  10. Remove steak and let rest for 5 minutes before serving.
