  • 1 ½ pounds skirt steak
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon rosemary, chopped
  • 1 teaspoon thyme, chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  • Step 1 – In a bowl, whisk together olive oil, apple cider vinegar, garlic, rosemary, thyme, salt, and pepper to create the marinade.
  • Step 2 – Place the skirt steak in the marinade and refrigerate for at least 2 hours.
  • Step 3 – Remove the steak from the fridge and let it come to room temperature for about 30 minutes.
  • Step 4 – Preheat the oven to 450°F and place a cast-iron skillet inside to heat up.
  • Step 5 – Pat the steak dry with paper towels and transfer it to the hot skillet on the stovetop. Sear for 1-2 minutes per side.
  • Step 6 – Transfer the skillet to the preheated oven and cook the steak for 10-15 minutes, depending on your desired doneness.
  • Step 7 – Use a meat thermometer to check the internal temperature: 130°F for medium-rare, 135-140°F for medium.
  • Step 8 – Remove the steak from the oven and let it rest for 5-10 minutes before slicing and serving.
