  • 2 filet mignon steaks (68 ounces each)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cloves garlic, minced
  • 1 sprig rosemary
  • 1 sprig thyme
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter

  • Step 1 – Rub the filet mignon steaks with salt, pepper, and minced garlic. Add a sprig of rosemary and thyme to each steak.
  • Step 2 – Place the seasoned steaks in a vacuum-sealed bag or a zipper-lock bag using the water displacement method. Add a tablespoon of olive oil to each bag.
  • Step 3 – Preheat your sous vide machine to 130°F (54°C) for medium-rare. Submerge the sealed steaks in the water bath and cook for 1 to 2 hours.
  • Step 4 – After sous vide cooking, remove the steaks from the bag and pat them dry with paper towels. In a hot skillet, melt 2 tablespoons of unsalted butter and sear the steaks for 1-2 minutes on each side until a golden crust forms.
  • Step 5 – Let the steaks rest for 5 minutes before serving to allow the juices to redistribute. Serve and enjoy your perfectly cooked filet mignon.
