  • 1 pound flank steak
  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 cup fresh parsley, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon red chili flakes
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  • Step 1 – Preheat your broiler on high for 10 minutes, and position the oven rack 4-6 inches from the heat source.
  • Step 2 – In a small bowl, combine olive oil, red wine vinegar, parsley, garlic, chili flakes, oregano, salt, and pepper to create the chimichurri marinade.
  • Step 3 – Marinate the flank steak in the fridge for at least 2 hours or overnight.
  • Step 4 – Remove the steak from the marinade, pat it dry, and place it on a broiler pan.
  • Step 5 – Broil the steak for 4-6 minutes on the first side until it develops a golden crust.
  • Step 6 – Flip the steak and broil for an additional 4-7 minutes, depending on your desired doneness.
  • Step 7 – Use a meat thermometer to check the temperature. Aim for 125°F for rare, 135°F for medium rare.
  • Step 8 – Remove from the oven and let the steak rest for 5-10 minutes before slicing against the grain.
