Ingredients

Scale
  • 4 chicken breasts
  • 1 cup all-purpose flour, for dredging
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup Parmesan cheese, finely grated
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons butter
  • 1/2 cup chicken stock or dry white wine
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, rinsed
  • Fresh parsley, chopped (for garnish)

Instructions

  • Step 1 – Start by heating your oven to 350°F (175°C).
  • Step 2 – Butterfly your chicken breasts to ensure even thickness and then pound them to about 1/4-inch thick between sheets of plastic wrap.
  • Step 3 – Mix the flour, salt, pepper, and Parmesan cheese together in a shallow dish. Dredge each chicken cutlet in the flour mixture, ensuring they are completely coated.
  • Step 4 – In a large skillet, heat the olive oil and butter over medium-high heat.
  • Step 5 – Add the chicken and fry until golden-brown, about 3 minutes per side.
  • Step 6 – Using the same skillet, deglaze with chicken stock or white wine, scraping up any brown bits. Add lemon juice and capers, and simmer until the sauce is reduced by half.
  • Step 7 – Whisk in the remaining butter to finish the sauce and add richness.
  • Step 8 – Pour the sauce over the chicken cutlets, garnish with chopped parsley, and serve hot.
