  • 1 lb skinless, boneless chicken breast, cubed
  • 1 cup carrots, sliced
  • 1 cup frozen peas, thawed
  • 1/2 cup celery, sliced
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon celery seed
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • Pie crusts, top and bottom

Instructions

  • Step 1 – Preheat your oven to 375°F (190°C).
  • Step 2 – Boil chicken, carrots, and celery in a medium pot until the chicken is fully cooked and the vegetables are tender.
  • Step 3 – In a separate saucepan, melt butter over medium heat. Add onions and cook until soft.
  • Step 4 – Stir in flour, salt, pepper, and celery seed to form a roux. Gradually whisk in chicken broth and milk, and simmer until the sauce thickens.
  • Step 5 – Drain the boiled chicken and vegetables, and mix them into the creamy sauce. Stir in the peas.
  • Step 6 – Place one pie crust in a deep pie dish. Spoon the chicken and vegetable mixture into the crust. Pour the creamy sauce over the filling.
  • Step 7 – Cover with the second pie crust, seal the edges, and make slits in the top to allow steam to escape.
  • Step 8 – Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown.
  • Step 9 – Let the pie rest for 10 minutes before serving.
