  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced

  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup beef broth
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  • Step 1 – Combine olive oil, garlic, lime juice, cumin, salt, chili powder, smoked paprika, and pepper in a bowl. Coat the skirt steak with the marinade and let it sit for a few hours or overnight in the fridge.
  • Step 2 – Heat olive oil in a skillet over high heat. Sear the marinated steak for 1-2 minutes on each side until a golden-brown crust forms.
  • Step 3 – Layer the sliced onions at the bottom of the Crock Pot to create a flavorful base and prevent sticking.
  • Step 4 – Place the seared steak over the onions in the Crock Pot. Cut the steak if necessary to fit.
