  • 2 filet mignon steaks, 1.5 inches thick
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 garlic clove, smashed (optional)
  • Fresh herbs (such as thyme or rosemary, optional)

Instructions

  • Step 1 – Fill your Instant Pot with water up to the mark indicated for sous vide cooking and set it to the desired temperature for doneness.
  • Step 2 – Season the steaks generously on both sides with salt and pepper.
  • Step 3 – Place the steaks in a vacuum seal bag, adding smashed garlic and fresh herbs if using. Vacuum seal the bag to ensure the steak is airtight.
  • Step 4 – Once the water has reached the desired temperature, submerge the vacuum-sealed steaks into the water. Place a lid on the pot or cover with aluminum foil to minimize water evaporation. Cook for 1 to 2 hours depending on the desired doneness.
  • Step 5 – When the steaks are nearly done, preheat a skillet on high heat and add the olive oil.
  • Step 6 – Remove the steaks from the bag, drying them thoroughly with paper towels. Sear in the hot skillet for about 1 minute per side, or until a golden crust forms.
  • Step 7 – In the last 30 seconds of searing, add butter to the skillet. You can also add more herbs and garlic for extra flavor. Baste the steaks with the melted butter continuously.
  • Step 8 – Remove the steaks from the skillet and let them rest for 5-7 minutes before serving. This allows the juices to redistribute throughout the meat, ensuring a moist and flavorful steak.
  • Step 9 – Plate your filet mignon with your choice of sides and spoon over any remaining butter from the skillet as a rich sauce.
