1 ½ pounds skirt steak
1 large onion, thinly sliced
1 cup beef stock
2 tablespoons red wine vinegar
2 tablespoons minced garlic
1 teaspoon smoked paprika
1 teaspoon salt
1 teaspoon cracked black pepper
1 tablespoon fresh herbs (such as thyme or rosemary)
2 tablespoons olive oil
1 pound potatoes, diced
1 tablespoon butter
Instructions
Step 1 – Season the skirt steak with salt, cracked black pepper, and minced garlic. Let it sit for a few minutes to absorb the flavors.
Step 2 – Set your Instant Pot to sauté mode and add olive oil. Once hot, add the thinly sliced onion and cook until softened, about 2-3 minutes.
Step 3 – Place the seasoned steak on top of the onions in the Instant Pot. Pour the red wine vinegar, smoked paprika, and fresh herbs over the steak.
Step 4 – Pour in the beef stock to cover the bottom of the pot, ensuring the steak is partially submerged.
Step 5 – Wrap the diced potatoes in a foil packet with a tablespoon of butter. Place the packet on top of the steak inside the Instant Pot.
Step 6 – Close the lid and set the Instant Pot to cook on high pressure for 15 minutes.
Step 7 – Once the cooking time is up, allow the pressure to release naturally for about 10 minutes.
Step 8 – Carefully remove the steak and potatoes from the Instant Pot. Slice the steak against the grain and serve alongside the buttery potatoes.
