This Instant Pot Skirt Steak is tender, flavorful, and easy to make. With a quick marinade and simple ingredients, you’ll have a delicious steak dinner in no time.

  • 1 ½ pounds skirt steak
  • 1 large onion, thinly sliced
  • 1 cup beef stock
  • 2 tablespoons red wine vinegar
  • 2 tablespoons minced garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon cracked black pepper
  • 1 tablespoon fresh herbs (such as thyme or rosemary)
  • 2 tablespoons olive oil
  • 1 pound potatoes, diced
  • 1 tablespoon butter

Instructions

  • Step 1 – Season the skirt steak with salt, cracked black pepper, and minced garlic. Let it sit for a few minutes to absorb the flavors.
  • Step 2 – Set your Instant Pot to sauté mode and add olive oil. Once hot, add the thinly sliced onion and cook until softened, about 2-3 minutes.
  • Step 3 – Place the seasoned steak on top of the onions in the Instant Pot. Pour the red wine vinegar, smoked paprika, and fresh herbs over the steak.
  • Step 4 – Pour in the beef stock to cover the bottom of the pot, ensuring the steak is partially submerged.
  • Step 5 – Wrap the diced potatoes in a foil packet with a tablespoon of butter. Place the packet on top of the steak inside the Instant Pot.
  • Step 6 – Close the lid and set the Instant Pot to cook on high pressure for 15 minutes.
  • Step 7 – Once the cooking time is up, allow the pressure to release naturally for about 10 minutes.
  • Step 8 – Carefully remove the steak and potatoes from the Instant Pot. Slice the steak against the grain and serve alongside the buttery potatoes.
