  • 1 New York strip steak (about 1-inch thick)
  • 2 tablespoons of olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, lightly crushed
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • Salt and black pepper, to taste

Instructions

  • Step 1 – Preheat your oven to 375°F (190°C). Season the steak generously with salt and pepper on both sides.
  • Step 2 – Heat olive oil in a cast iron skillet over high heat until very hot. Place the steak in the skillet and sear for 2-3 minutes on one side until it develops a golden crust.
  • Step 3 – Flip the steak and sear the other side for another 2 minutes.
  • Step 4 – Add butter, garlic, thyme, and rosemary to the pan. As the butter melts, tilt the pan slightly and use a spoon to baste the steak repeatedly with the butter.
  • Step 5 – Transfer the skillet to the middle rack of the preheated oven. Cook for about 5-7 minutes for medium-rare doneness.
  • Step 6 – Remove the skillet from the oven and continue to baste the steak with the butter mixture for another minute as it rests.
  • Step 7 – Let the steak rest for 5-10 minutes before slicing to allow the juices to redistribute.
  • Step 8 – Serve the steak with additional drippings from the pan poured over the top for enhanced flavor.
